Thanks to everyone for these suggestions: Hiscocks Saddlery at Queanbeyan was great, with genuinely helpful friendly staff and an unexpectedly huge range of hats including Akubra etc. Definitely worth the trip across the border.

Not quite the answer you were seeking, but a weekend trip to the Blue Mountains could include a visit to the Katoomba Hattery. They really know their stuff. No, I do not own shares in it. Just a satisfied customer.
